Plantain Empanadas
Sweet plantain meets Fressh Protein Arepa Mix in this twist on a classic empanada. The plantain adds a subtle sweetness and soft texture to the dough, while the Protein Arepa Mix gives it an extra protein boost. Fill them with chicken, cheese, or whatever you’re craving, then air fry until golden.
Ingredients
For the dough
- 1 ripe plantain, boiled until soft
- Approx. 1 cup Fressh Protein Arepa Mix
- ¼ cup hot water
- Salt to taste
For the filling
- Cooked ground chicken, or your filling of choice
For cooking
- Olive oil spray
Instructions
- Boil the plantain. Peel and boil the plantain until completely soft. Drain and mash well until mostly smooth.
- Make the dough. Add approximately 1 cup of Fressh Protein Arepa Mix to the mashed plantain. Add the hot water and salt to taste, then mix until a soft, workable dough forms. Add a little more mix or water as needed to get the right consistency.
- Roll out the dough. Place a portion of dough between two pieces of plastic wrap. Gently flatten it into a thin, even circle. The plastic wrap keeps the dough from sticking and makes the empanadas easier to shape.
- Add the filling. Remove the top layer of plastic and place a small amount of cooked ground chicken in the center. Avoid overfilling so the empanada seals properly.
- Fold and shape. Using the bottom piece of plastic wrap, fold the dough over the filling to create a half-moon. Gently press around the edges to seal.
- Cut the empanada. While it is still covered with the plastic wrap, use the edge of a round plate, bowl, or large glass to press down around the empanada and cut away the excess dough. Remove the excess and carefully peel away the plastic.
- Air fry. Lightly spray both sides with olive oil. Air fry at 375°F for 10 minutes, flip, then cook for another 8 minutes, or until golden and lightly crisp on the outside.
- Let cool for a couple of minutes and enjoy warm.
Tip: Because the plantain size and moisture can vary, the amount of Fressh Protein Arepa Mix is approximate. Adjust until you have a dough that is soft but easy to shape.
